Carnival Squash Soup

Number of Servings: 6

Ingredients

    2 Medium Carnival Squash
    1 medium yellow onion
    3 cups Vegetable broth
    3 Tablespoons Greek Yogurt (Plain)
    1.5 Cups Almond Milk

Directions

Squash:
1. Preheat over to 400 degrees F
2. Cut each squash in half, gut out the seeds
3. Brush squash insides with olive oil
4. Roast for 30-40 minutes

Onion:
1. Cut 1 medium yellow onion into small strips
2. Sautee in two tablespoons of olive oil until translucent

When squash is ready, remove from oven. Let cool.

Combine:
1. Peel Squash
2. Cut into squares
3. Add to onions in pan, sautee together for a few minutes
4. Puree squash and onion together with broth, almond milk, and yogurt
5. Add cinnamon, curry, etc to taste

Serving Size: Makes 6 1 cup servings
