Cabbage and chicken soup

Introduction

Number of Servings: 10

Ingredients

    1/3 to 1/2 cabbage sliced
    1 large onion or 2 medium onions
    6 cloves of garlic
    4 stalks of celery
    12 cups of water (this is approximate, roughly 2 to 3 litres depending on pot size and how thick or thin you want the soup to be.)
    2 medium carrots (grated)
    Fresh ginger 1 to 2 inches sliced or diced depending on taste
    1 large potato (grated)
    1 can of diced tomato in puree
    300grams app of any frozen mixed veggie combo
    3 to 5 chicken pieces

    Note: I prepared my soup in a 5 litre pot and aimed for two bowls of soup a day for 5 days. Be guided by your pot size and the thickness or thinness of the soup you wish to serve. Experiment and add more or less ingredients until you are satisfied with the result. :)

Tips

serve each bowl with a couple of slices of bread to satisfy the larger appetite. Pre-freeze in soupbowl portions for easy meals.

Directions

Simmer chicken pieces for a couple of hours. Remove bones and skin and shred the chicken. Add the veges and simmer for another 30 minutes.
