Roast Cauliflower Soup-Low carb.

Introduction

Veggie low carb soup. Veggie low carb soup.
Number of Servings: 4

Ingredients

    2 tablespoons of Olive Oil,
    Head of cauliflower,
    1 cup of cream,
    1 onion,
    3 cups of stock,
    Salt and pepper to taste.

Directions

1. Place the chopped onion, and cauliflower florets, in a baking dish. Season with salt and pepper. Drizzle with olive oil. Then roast in the oven at 190C/375 F until golden.

2. Put the baked veg, into a pot with stock. Bring to the boil and simmer for five minutes. Before liquidizing with a blender. Add more seasoning if necessary.
