Roasted Vegetable Pasta

Ingredients

    Creamette Rainbow Rotini, 12 oz box
    Extra Virgin Olive Oil, 2 tbsp
    Large Yellow Onion, peeled and chopped
    Baby Portabella, 2 sliced
    Eggplant, 1 small peeled and diced
    Carrots, 1 cup sliced
    1/2 tsp. salt
    Black Pepper
    Oregano 1 tsp
    Basil 1 tsp
    Veggie Shreds [optional]

Directions

Chop and slice veggies. Put them in a large mixing bowl, add oil, salt, pepper, and spices. Toss to coat. Cook in a shallow pan in a 400 degree oven for 20 minutes. While they are cooking, cook the rotini. Drain the rotini and add everything to a large bowl and mix well. Add some veggie shreds too!

Serving Size: makes 5-6 servings.
