Baked Veggies and Cheese

Number of Servings: 8

Ingredients

    Gruyere Cheese, 5 oz (I buy a block and shred it myself)
    2% Sharp Cheddar Cheese, 2 cups
    Fage plain greek yogurt, 8 oz
    Skim milk, 1 cup
    Broccoli and Cauliflower mix, 2 bags

Directions

Steam the broccoli and cauliflower, drain, set aside.
Blend the milk and yogurt then heat just to boiling then reduce heat to low.
Add in all but 0.5 cup of the shredded gruyere until completely melted, stirring constantly.
Add in all but 0.5 cup of the shredded cheddar until completely melted and smooth.
Combine with the broccoli and cauliflower until completely coated.
Transfer to a 9x13 baking pan and top with the remaining shredded cheese. Bake at 350 degrees until cheese is melted.

Serving Size: makes 8 servings
