Introduction

Number of Servings: 30

Ingredients

    6 mashed bananas, very ripe
    6 C old-fashioned rolled oats
    2 C milk
    5 large eggs
    1 t baking powder
    1/4 t baking soda
    1 t apple pie spice ( or cinnamon)
    1 t vanilla
    1/4 C dark chocolate chips
    1/3 C chopped walnuts
    2 T flax seed
    1 medium apple, cored and diced in thumbnail-sized pieces

Directions

Preheat oven to 375 F.
1. In a large mixing bowl, combine all ingredients.
2. Prepare muffin tins by spraying liberally with nonstick spray.
3. Mix ingredients well and then fill muffin cups 3/4 full. Muffins don't rise very much.
4. Cook at 375 for 20-30 minutes, until tops are golden. Allow muffins to cool in tins before removing.


Serving Size: Makes 30 medium sized muffins
