Barley Vegetable Stew

Number of Servings: 6

Ingredients

    Scallions, raw, 3 large
    Leeks, 1 leek
    Vegetable Broth, 4 cup
    Bird's Eye, Mixed Vegetables, Frozen, California Blend
    Cherry Tomatoes, 15, cut in half
    Barley, 1.5 cup
    Parsley, 2 tbsp
    Thyme, fresh, 1 tsp
    Basil, 1 tbsp
    Bay Leaf, 2 serving
    Butternut Squash, 2 cup, cubes
    Salt/pepper to taste
    Extra Virgin Olive Oil, 1 tbsp

Directions

Add all ingredients to slow cooker, high setting. Cook for 6-7 hours until barley is tender and ready to eat.

Add salt and pepper at the end.
