Mark's Creamy Potato Turnip Soup

Introduction

Number of Servings: 8

Ingredients

    1 lb. turnip turnip chunks
    1 lb. potato chunks
    1/2 c. chopped onion
    1 clove garlic
    1.5 c. chicken broth
    3 Tbsp. butter
    1 stalk celery, finely chopped
    1/4 c. sour cream
    1/2 tsp. salt
    1/4 tsp. pepper

Tips

If you don't have a vita-mix, cook the veggies till they are more thoroughly done and blend in a standard blender or food processor.


Directions

Sautee the onion, celery, and garlic in the butter until translucent. Cook potatoes and turnip chunks in water, then drain. Add cooked onions/garlic and turnips/potatoes to a high-powered blender like a vita-mix, and add the broth and seasonings. Puree till very smooth and hot. Add sour cream and blend slightly more.

Serving Size: Makes approx. 8 servings of 1 cup each
