Vegan Banana Bread

Introduction

This is a recipe I modified from one I found online so I could share at work because one of my co workers is vegan. It is very simple and doesn't require a mixer to make it. Number of Servings: 10

Ingredients

    3 ripe bananas smashed
    1/3 c. hot coconut oil
    3/4- 1 cup of Splenda
    1 tsp. vanilla extract
    1/2 c. apple sauce
    1 1/2 c. self rising flour

Tips

I add the flour in 1/2 cup at a time to make it easier to mix. Also, I only use about 3/4 c. of Splenda and find it makes it sweet enough.


Directions

No need for a mixer for this recipe. Preheat the oven to 350░F (175░C). With a wooden spoon, mix coconut oil into the mashed bananas in a large mixing bowl. Mix in the Splenda, apple sauce, and vanilla. Add the flour and mix. Pour mixture into a coated 4x8 inch loaf pan. Bake for 45 minutes to an hour. Cool on a rack. Remove from pan and slice to serve.
