Meringue Christmas Cookies

Introduction

Ingredients

    2 Egg Whites, beaten very stiff
    1/2 cup sugar, gradually added
    1/2 t mint flavoring or almond extract
    1/2 c. chocolate chips
    1/4 cup chopped pecans
    food coloring

Directions

Preheat oven to 350
Beat eggs till very stiff
(NOTE: Flavorings not listed in Spark ingredient list)
Gradually add sugar
Fold in last 3 ingredients.
Also add food coloring in red or green.
Cover cookie sheets with aluminum foil.
Drop rounded tsp. slightly apart.
Put in oven and TURN OFF the heat.
Leave in closed oven at least 2 hours or overnight to dry up the cookies.

    Great recipe! Very clear directions. I tried it with Splenda blend and it came out great! This recipe has lots of possible variations. I tried it with coconut extract and some unsweetened coconut. I can see this cookie being a big hit for dessert day at work, where everyone is always on a diet. - 2/11/09

    I love meringues! I usually make mine plain or with a bit of crushed candy cane though. I also like to pipe them in the shape of "kisses" with a pastry bag and sprinkle with colored sugar. - 12/19/09

    I love these cookies. They are easy and definitely help you stay away from fats. I use 1/8 t cream of tartar and 1/8 t of salt. I'll be making these forever! - 1/8/09

    These are the biggest hit of all my holiday cookies - and one of the EASIEST meringue recipes out there! I substituted a little bit of beet juice instead of food coloring. Made a nice light pink cookie. - 12/15/07

    In my family, we've always called these "Nighty-Night Cookies." On Christmas cookie baking day, we made lots of different kinds of cookies and this was the type we did. Put them together, throw them in the oven and say "Nighty-Night, Cookies." They are really very yummy. I leave out the nuts. - 12/3/08

    my goodness!!!i am 67,my mother made these for us kids,i made them occ. at christmas.have not had recipe for years,it got lost somewhere.i am so happy to see this!!!!!will def. make.they are sooooogood.just plain with color and flavor.also sprinkle on color sugar. - 12/4/07

    I have been making meringue cookies for years the exact same wqy.The only difference I have never put pecans in it.I make 2 versions one with mint and add a little green food coloring and one with just chocolate chips.These are my absolute favorite Christmas Cookie. - 12/3/07

    Wow! I did them with mini chocolate chips and mint extract and they were delicious! I have waited so long to try to make meringue because I was scared I would screw up...I did not! It was so easy! Thank you so much! I will prepare those for every occasion! :) - 2/12/09

    these are great with some cinnamon hearts sprinkled in; we call them Christmas Meringues and absolutely love the cinnamon-y flavor; or you can use crushed peppermint candy too. - 12/4/08

  • ooppps! I think I misunderstood the directions. My egg whites were nice and stiff, I added the sugar gradually as I continued to beat the mixture. It fell flat. I now have thin drippy pancake like cookies on cookie sheets in my oven. The foil stuck to them! Starting 2nd batch, do I oil pans? - 12/24/09

  • We've made these for years & sometimes added sifted coco powder with the sugar to make Chocolate Forgotten Cookies. Use vanilla or chocolate extract and add mini choc. chips & pecans. They're wonderful all the time except on humid days. They take longer to dry & must be kept in airtight container - 12/17/09
