My Chicken and Dumplings

Introduction

Ingredients

    4 quarts water
    4 skinless, bone-in thighs
    1 1/2 cup chopped celery
    10 baby carrots chopped
    1/2 medium onion chopped
    1/2 teaspoon parsley
    1/2 teaspoon sage
    1/4 teaspoon poultry seasoning
    1/4 teaspoon thyme
    salt and pepper to taste

    DUMPLINGS
    1 cups flour
    3 teaspoons baking powder
    1/2 teaspoons salt
    1 cup milk or water


Directions

In a large pot bring water to a boil, add chicken thighs whole and begin cooking. After cooking about 15 mins. add chopped vegetables and seasonings. Continue to cook on medium heat until chicken is done, approximately 1 hour. When chicken is tender remove from pot and shred into small pieces, discard the bone. Return chicken to pot. In a small bowl add corn starch and some of the broth from the pot, mix well and add to pot. This will thicken the broth. Test broth for flavoring, adding additional seasoning as desired.
DUMPLINGS:
Sift flour, baking powder, and salt together; add liquid and mix to make a batter that can be dropped from a spoon. Drop onto boiling stew, being careful there is plenty of liquid. Cover and cook for 10 to 15 minutes, depending on size of dumplings.
