Cheese Biscuits, Low Carb

Introduction

Number of Servings: 4

Ingredients

    1/2 cup ground golden flaxseed
    1/2 cup almond meal/flour
    1/2 teaspoon baking powder
    1/2 teaspoon baking soda
    1/4 teaspoon salt
    2 tablespoons cold butter
    1/2 cup grated cheddar cheese
    1 large egg
    1 teaspoon rice vinegar (or other vinegar)

Tips

(May add some fresh chopped rosemary if desired)


Directions

Heat oven to 350F; line a baking sheet with parchment.

Mix together the ground flaxseed, almond flour, baking powder, baking soda, and salt. Cut in the butter until combined. Stir in the grated cheddar cheese. (If adding a little fresh rosemary, do it now.)

In another small bowl, beat the egg with the vinegar. Then pour the egg & vinegar into the flax/almond/butter/cheese mixture and mix well.

Spoon into four mounds on the prepared baking sheet, and flatten to 3/4" thickness. Bake until golden, about 15 minutes.

Serving Size: Use 1/4 recipe to make one biscuit.
