Low Fat Nachos

Introduction

Ingredients

    Shredded Chicken
    tortilla chips
    fat free refried beans
    shredded cheese, Mexican

    Optional: salsa, low fat sour cream.

Tips

I ran out of packaged taco seasoning one time and, being to lazy to run out for more, I googled a recipe for it. Since I had everything on hand I just mixed it up myself. I love the flavors of all the spices mixed fresh and the packaged stuff tastes funny to me now.

I use full fat tortilla chips and cheese because I find the dish much more satisfying that way. This way I know that I'm eating a good meal that isn't going to leave me hungry or be boring.


Directions

I make shredded chicken in batches in the crock pot and this is one of the recipes I use it in. Just add 4 chicken breasts (or equivalent tenders) to a crock pot with taco seasoning and a jar of salsa, any heat. Cook on high for 4 hours, remove the chicken and shred with two forks then stir it back into the crock pot with all the juice. Let the flavors meld another twenty minutes and enjoy.

For Nachos I preheat the oven to 400F. Add half the chips to a pizza pan or cookie sheet, dot half the beans and chicken all over followed by half the cheese. I repeat with the remaining ingredients and bake it for 10 minutes. I like layering it because I think the flavors come together better than if I were to just pile one ingredient on top of another. If I'm feeling really indulgent, I will serve it up with a little low fat sour cream and some salsa.

Serving Size: makes one large serving of delicious nachos as a meal, or split it with someone as a fabulous snack.
