8 oz. rotini pasta
2 medium zucchini, quartered & sliced
1 large red bell pepper, diced
4 T. balsamic vinegar
1-1/2 c. marinara or other garden veggie pasta sauce
2. Coat non-stick pan with cooking spray. Add zucchini, bell pepper, and cook about 10-15 minutes until tender. Add balsamic vinegar to veggies about halfway through cooking.
3. Add pasta and pasta sauce. Heat through until completely warm, about 5 minutes.
