Chicken Curry with Lentils

Introduction

Number of Servings: 4

Ingredients

    16 oz or 4 boneless, skinless chicken breasts
    1 cup red lentils
    1 cup quinoa
    4 cups chicken stock or broth
    1 can of tomatoes
    1 Tbs curry powder or curry powder blend
    salt and pepper to taste

Tips

To keep the ingredients from sticking, use a slow cooker liner, available near the aluminum foil in your grocery store.


Directions

place chicken breasts in the bottom of the slow cooker. Mix together other ingredients in a bowl, stir to combine, pour over chicken breasts. Cook on low for 6 hours stirring once or twice during cooking to keep lentils and quinoa from sticking to the bottom.
