Stashy1's Chicken Broth

Ingredients

    1 Large Roasting Chicken @ 3 Lbs.
    2 Large Carrots peeled & diced
    2 Large Stalks Celery chopped
    1 Mediun Onion chopped
    A few Pepper Corns whole

Directions

Put Chicken and rest of Ing. in large stock pot. Cover with water and bring to boil. Turn to low and simmer 3 hours or until all the meat falls from the bones. Remove bones and skim out rest of chicken and vegies. Strain fluid through a seive. Let stand until cool enought to put in Fridge. When chilled, lift off the fat that has come to the top. Put remainder in Plastic/glass jars or Freezer Bags and freeze. Makes @ 10 cups of broth.
