Karen's Boiled Raisin Cake

Introduction

Comfort food. Boil the first 7 ingredients for 3 minutes and then cool. Add flour, soda and baking powder. Ingredients

    1/2 cup brown sugar Splenda
    1/2 cup margarine
    1 cup cold water
    1 cup raisins
    1/4 tsp. salt
    1/2 tsp. cinnamon
    1 tsp. allspice
    2 cups whole wheat flour
    1 tsp. soda
    1/2 tsp. baking powder

Directions

Put the Splenda, margarine, cold water, raisins, salt, cinnamon and allspice in a pot and bring the mixture to a boil. Boil for three minutes and then cool it to room temperature. Stir in the whole wheat flour, baking soda and baking powder until the mixture is smooth. Place in an 8x8 inch baking pan or in 13 muffin papers. Bake at 350 degrees until done. The muffins will take 20 minutes, the cake 40 to 45 minutes.

Serving Size: makes 13 muffins or an 8x8 inch cake
