SPINACH & CHEESE CASSEROLE

Introduction

Great for your vegetarian guests or a side dish for brunch-serve with fruit and a breakfast meat such as ham or sausage. Great for your vegetarian guests or a side dish for brunch-serve with fruit and a breakfast meat such as ham or sausage.

Ingredients

    2-10 oz. pkgs frozen spinach, defrosted
    1 onion, chopped
    2 cloves garlic, minced
    8 tbs melted butter
    6 eggs, beaten
    16 ounces cottage cheese
    2 Tbs. all-purpose flour
    1 lb. sharp Cheddar cheese, grated
    salt, pepper and nutmeg

    Preheat oven-drain spinach very well (see tips)
    Saute the onion & garlic in 2 Tbs of butter,
    Mix the spinach with the beaten eggs, cottage and Cheddar cheeses, flour and the remaining 6 Tbs melted butter.
    Add the sautéed onion & garlic; season with salt, pepper and nutmeg to taste.

Tips

The spinach should be completely defrosted-wring it dry or if you don't want to handle it-squeeze in tea towels-you don't want spinach "juice" in your casserole!

Bake for 1 hr in a lightly greased 9x13 pan 350 degrees (325 degrees for a glass pan),
