Beef Roast with Onion Soup

Ingredients

    2 lb. Beef Eye of Round Roast
    2 cans french onion soup
    1 packet Lipton Onion Soup Mix
    about 7 medium red potatoes
    1 large onion
    1 bunch of asparagus

Directions

Preheat oven to 375 degrees fahrenheit. In frying pan, sear meat so it's brown all sides. Rub Lipton Onion Soup Mix on roast. Cut potatoes and onion into large chunks. Break off woody ends of asparagus and cut in half. Place veggies in pan and roast on top. Pour soup over contents. Roast for an hour or until inner temperature of roast reaches 125 degrees fahrenheit. Take meat out of dish and wrap loosely with foil. Let stand for 10 minutes to rest. Cover veggies while meat is resting. Slice meat and serve.

Serving Size: Makes about 10-3 oz. servings of meat plus veggies
