Introduction

As a diabetic who is now helping plan my father's carb counting and low-sodium diet, I have found this family recipe to come in quite handy with meal planning. Number of Servings: 6

Ingredients

    1 Large Egg
    1 Lb. Ground Chuck
    Zesta Saltines (approx. 16)
    Hunts No-Salt Added Tomato Sauce (15 oz can)
    Water (15 oz can)

Tips

My mother always added diced onions in the mix. Dried Onion Soup Mix is also a tasty option. This is a great comfort food served with mashed potatoes and green beans!


Directions

Preheat oven to 400 degrees. Mix ground chuck, egg and crushed crackers. Form into a loaf and place in a roasting pan. Pour tomato sauce on top of and around the loaf. Fill sauce can with cold tap water and add around the loaf. Cover and bake in the preheated 400 degree oven for 30-35 minutes. Uncover and continue to bake for an additional 30 -35 minutes.
