Easy Butternut Soup

Easy Butternut Soup

Introduction

I pressure cooked the squash until done, then mashed it prior to putting in pan. I pressure cooked the squash until done, then mashed it prior to putting in pan.
Number of Servings: 6

Ingredients

    4 Cups Butternut squash, mashed
    2 cans (14.2 oz) Chicken Broth
    1/2 Cup Sour Cream
    1 tsp Olive Oil
    1 Medium Onion, Shredded on a box shredder
    Dash Nutmeg
    Dash Cayenne Pepper

Directions

Precook squash and mash, set aside. In Dutch Oven on stove, saute onion in olive oil until translucent. Add mashed squash, chicken broth, nutmeg and sour cream to onion on stove. Heat slightly. Fill a blender cup 3/4 full and pulse until pureed. Continue until all soup has been blended, then return to stove to finish heating to serve. Put in bowl and sprinkle with dash of cayenne pepper.
