Classic Coconut Chutney

Ingredients

    Ingredients:


    Coconut, raw, 1 cup, shredded
    Red Hot Chili Peppers, 5 ( roasted) for spicy or 1 for mild.
    Ginger Root, 2 tsp
    Cilantro 1 sprig

    Seasoning:
    Asafoetida / Hing powder, 0.5 tsp
    Olive Oil, 1 1tsp
    Mustard seed, yellow, .75 tsp
    Salt, 0.25 tsp or to taste.

Directions

Blend first 4 ingredients till smooth with 1/2 a cup of water in a blender. Add salt and zip once more.
Season with heated oil, drop the mustard seeds until popped, stir in the asafoetida powder and chopped fresh curry leaves. The chutney can be served with dosa, idli or upma.

Optional: Add a 1/4 cup of fresh coriander leaves (cilantro) while blending. Serves 6-8 people.
