1 Thomas Everything Bagel Thin
1 Laughing Cow Creamy Swiss Cheese Wedge
1 Slice Canadian Bacon (look for Breakfast cut)
1/4 c Egg Beaters - Southwestern Style
Butter flavored non-stick spray
Equipment: Toaster, Microwave, Butter Knife to spead the cheese, Microwave safe cereal bowl or any bowl with a bottom roughly the size of your bagel.
Can easily be made vegetarian by omitting the Canadian Bacon or using a meat substitue patty.
You can change this up by using Classic Egg Beaters instead of Southwest, different flavors of Bagel Thin and different flavors of Laughing Cow Cheese. The varieties are nearly endless.
While it toasts spray your bowl with non-stick spray (really, do this, otherwise your eggs will stick) and pour in the Egg Beaters, no need to stir - microwave on high 45 seconds, or until egg puffs up. Place Canadian Bacon in bowl on top of egg and microwave an additional 15 seconds.
Retrieve your bagel from the toaster and spread the cheese wedge onto the inside of the top half of the bagel. Slide your egg/canadian bacon out of the bowl and onto the bottom half of the bagel, top with the cheesy half. Enjoy!
