Ingredients

    1 cup whole brussels sprouts
    1 cup milk 2%
    1 T ap flour
    1.5 T earth balance or margarine
    pinch nutmeg
    salt and pepper
    1 1/2 cups farfelle pasta

Directions

slice brussels sprouts and saute in 1/2 T margerine.
to make sauce, melt 1T margerine in a small saucepan and whisk in 1 T all purpose flour. cook for a couple minutes and whisk in the milk. simmmer until thickened and add a pinch each of salt pepper and nutmeg and the paremesan cheese.
cook pasta accoring to package directions, drain and mix with sauce and sprouts.

Serving Size: makes 2 servings
