Cranberry Quinoa Salad



This is adapted from a recipe found on Mind Body Green. This is adapted from a recipe found on Mind Body Green.
Number of Servings: 4


    1 cup uncooked quinoa, rinsed
    1/2 cup dried cranberries
    2 scallions, finely chopped (I used 1/2 cup diced celery instead)
    1/4 cup toasted almonds, sliced (I used whole raw almonds and chopped them up)
    1/4 cup fresh cilantro, chopped
    1 tbsp. fresh parsley, chopped
    2 tbsp. fresh squeezed lemon or lime juice
    2 tbsp. extra virgin olive oil
    1/4 tsp. ground coriander
    1/4 tsp. ground cumin
    salt and pepper to taste


Feel free to change any ingredients you'd like. I don't like scallions so I added celery instead. I didn't want to toast my almonds so I used them raw and just chopped them up instead of slicing them. Enjoy!


1. Cook quinoa according to package directions, transfer to bowl and refrigerate.
2. Once cool, combine quinoa, cranberries, scallions, almonds, cilantro and parsley in a large bowl.
3. In a separate bowl, whisk together lemon (or lime) juice, olive oil, coriander, cumin, salt and pepper.
4. Pour dressing over quinoa, stirring gently to coat.

Serving Size: Makes 4 servings
