Old-Fashioned Beef Stew

Introduction

Ingredients

    1 T. vegetable oil
    1/4 t. pepper
    1/4 t. salt
    1 1/2 lbs. beef stew meat, cubed
    4 medium carrots (2 c.), cut into bite size pieces (or baby carrots, cut in half to equal 2 c.)
    3 medium red potatoes, cut into 1/2" cubes (1 1/2 c.)
    1 sweet potato, peeled and cut into 1/2" cubes (1 1/2 c.)
    1 large yellow onion, cut into bite size pieces (1 1/2 c.)
    2 stalks celery, cut into bite size pieces (1 c.)
    3 c. vegetable juice
    3 T. quick cooking tapioca
    1 T. beef bouillion granules
    2 t. Worcesterchire sauce


Tips

Serve this hearty stew with a good loaf of crusty bread.


Directions

1. In 12-inch skillet, heat oil over medium-high heat. Add beef and season with salt and pepper. Cook 4 minutes, stirring frequently, until browned on all sides.

2. In crockpot, add rest of ingredients and beef; stir until mixed together.

3. Cover; cook on low for 8 hours.

Serving Size: Makes 6 servings (1 2/3 c. each)
