Quick Garlicky White Beans

Introduction

A mortar & pestle make preparation quick and easy.
Garlickly White Beans are great on salads, with pasta, and plain on the plate.

Number of Servings: 4

Ingredients

    1 - 15.5 oz can or 2 cups cooked Great Northern Beans, rinsed and drained (can also use cannellini beans)

    2-3 cloves of garlic
    1/2 tsp kosher salt

    1 TB red wine vinegar
    1 tsp sugar (optional)
    4 tsp extra virgin olive oil - or to taste
    4-5 fresh basil leaves or several shakes of dried basil

Tips

You can also use a clean jar or drinking glass to mash the garlic in a small bowl.


Directions

Rinse and drain the beans.
Mash garlic with mortar & pestle. Add the salt to the mortar to assist the mashing.
Layer the garlic with the beans in a bowl.
Sprinkle the vinegar and sugar over the top.
Chop the basil fine or shake dried basil over the beans.
Mix all together.
Can eat immediately or allow to blend in the refrigerator.

Serving Size: makes 4 1/2 cup servings
