Sweet Potato and Broccoli Soup

Number of Servings: 4

Ingredients

    2 Medium Sweet Potatoes peeled and cut into 1/2" cubes
    1 bunch of broccoli crowns coarsely chopped
    1 large onion chopped
    3 cloves garlic minced
    3/4 cup veg. or chicken stock
    1tsp Thyme
    1tsp Chili powder
    1 tsp cinnamon
    salt and pepper to taste
    2 cups unsweetened almond milk (or lowfat milk)
    2 tsp virgin coconut oil (or olive oil)

Directions

Heat soup pot. Add oil, onion, garlic and sweet potatoes. Pinch salt to sweat the vegetables. O ce onion is translucent and potato starts to soften add broccoli and stir until well combined. Add chicken stock. Bring to a boil add seasonings and simmer for 15 minutes until very tender. Lower heat and add milk slowly. Use stick blender to "cream" the soup. Leave some chunks of vegetable for texture if you would like.
