Ingredients

    1.5 Cups prepared Mixed dried beans
    1 can Coconut Milk
    I can evaporated mild
    1 container vegetable broth
    1 diced onion
    1 finely chopped Carrot
    1 stalk celery
    Pinch of nutmeg
    Pinch of sage
    1/2 tsp chili powder
    1-2 tblsp curry or to taste
    1/4 tsp minced garlic, ginger, hot pepper
    1/4 tsp minced lemongrass
    1 tsp sweet and hot mustard
    Salt and pepper
    1 box red pepper quinoa


Directions

Soak beans overnight, and boil the next day for 45 mins to soften
Dice carrots, onions and celery and sauté in olive oil in a large pot. Add beans and the remaining ingredients and cook for approx. 30-40 min.
