MorningStar Breakfast Casserole

Introduction

My boyfriend and I altered the "Veggie Medley Frittata" recipe found on the Morningstar Bacon package to create this recipe. My boyfriend and I altered the "Veggie Medley Frittata" recipe found on the Morningstar Bacon package to create this recipe.
Number of Servings: 8

Ingredients

    1/2 package MorningStar Farms bacon
    1 c broccoli
    3/4 cup sliced mushrooms
    2 finely chopped green onions
    1 c copped red or green bell pepper
    1 T butter or margarine
    10 eggs
    2 1/2 C soymilk
    1/2 cup half and half
    1/2 tsp oregano
    1/4 tsp black pepper
    1/4 tsp garlic powder
    1 c shredded cheddar cheese
    1/2 c shredded parmesan cheese
    1/2 c chopped tomatoes

Directions

1. Prepare bacon strips per package instructions, Allow to cool and cut or tear into bite size pieces.

2. In a large skillet, saute broccoli, mushrooms, green onions,and bell peppers in butter until tender. Remove from heat and set aside.

3. In a large mixing bowl, beat togther eggs, milk and spices.

4. Stir in bacon, cheese, tomatoes, and veggie mixture. Pour into a greased shallow 1 1/2 quart baking dish. Bake at 350 for 35- 45 minutes or until a knife inserted in the center comes out clean.

Makes approximately 8 servings.
