Ingredients

    3/4 CORN MEAL
    2 CUPS ALL PURPOSE FLOUR
    1/2 TSP BAKING SODA
    1 TSP BAKING POWDER

    2 LIGHTLY BEATEN LARGE EGGS
    GRANULATED SUGAR, 1/4 CUP
    3 TBS MELTED BUTTER
    1.5 TBS VINEGAR

    1 C WHOLE KERNEL CORN

    1 C LIGHT SOUR CREAM--OR GREEK YOGURT

Tips

BE SURE THE PAN IS VERY WELL OILED AND HOT!

MIX DRY INGREDIENTS

MIX WET INGREDIENTS

ADD CORN TO WET INGREDIENTS

ADD WET AND DRY TOGETHER AND STIR WELL.

POUR INTO HEATED AND BUTTERED LARGE CAST IRON SKILLET. IT SHOULD SIZZLE A LITTLE.

BAKE AT 350 DEGREES FOR 40 MINS OR UNTIL DONE.
