Introduction

Number of Servings: 12

Ingredients

    Muffins
    1 1/2 c. Raisin Bran Cereal
    1 c. milk
    1 egg, beaten
    1/4 c. applesauce
    1 tsp. vanilla
    1 1/2 c. flour
    1/2 c. sugar
    3 tsp. baking powder
    1/2 tsp. salt
    1 Granny Smith Apple (chopped/diced)
    1 tbsp pumpkin pie spice

Directions

Yields 12 Regular Size Muffins

1. In a large bowl soak raisin bran cereal in milk and water for 10 minutes
2. Meanwhile, chop apples into small pieces
3. In a separate small bowl combine egg, oil and vanilla
4. After the 10 minutes is up add the egg mixture to the cereal and milk. Mix well.
5. Add flour, sugar, baking powder and salt. Mix until just moistened (the batter will be lumpy)
6. Divide batter between 12 greased or paper-lined muffin tins
7. Bake at 400 degrees for 20 minutes or until done
