Lemon Vodka Cream Sauce

Lemon Vodka Cream Sauce


Lighter version of RR's Limoncello sauce Lighter version of RR's Limoncello sauce
Number of Servings: 7


    1 1/2 cups Fat free half and half
    2 tbsp unsalted butter
    10 fresh Basil leaves, chopped
    2 oz lemon flavored Vodka or Limoncello
    2 Lemons, 1 zested, juice from both
    1 clove Garlic crushed
    4 tbsp Parmesan cheese
    1tsp black pepper

    14 oz Whole Wheat Angel Hair or other favorite Pasta (not included in nutritional info)


Cook pasta as directed.

Meanwhile, melt butter in med skillet over med high heat then add garlic and let cook for 5-10 seconds until aromatic. Add 1/2 & 1/2, vodka, lemon juice, and lemon peel. Bring the mixture to a boil, then reduce the heat and simmer until slightly thickened, about 10 minutes. Remove the garlic clove from the sauce and discard.

Drain pasta, return to pan and add the sauce, basil, and pepper, toss to combine. Sprinkle with Parmesan and additional basil (if desired) before serving.

Makes enough sauce to cover 14oz pasta (about 7 servings)
