Unstuffed Pepper Pot

Introduction

Great meal in one pot. Very filling! Great meal in one pot. Very filling!
Number of Servings: 6

Ingredients

    1 pkg ground turkey (19.2 oz)
    4 large peppers, any color, chopped
    1 large onion, chopped
    2 small summer squash, seeded and chopped
    8 oz mushrooms, chopped
    6 cloves garlic
    2 cups tomatoes, seeded and chopped
    10 oz pkg fresh spinach, coarsley chopped
    2 cups tomato sauce
    2 cups brown rice, cooked
    6 tbls parmesan cheese

Directions

Cook rice, set aside.
In a large pot, brown turkey. Drain.
Add peppers, onions, squash, mushrooms and garlic. Cook until vegetables are tender.
Add tomatoes and spinach. Continue cooking just until spinach wilts.
Add rice and tomato sauce. Heat through. Adjust seasonings to taste.

Serve with 1 Tbls of cheese on top.
