Ingredients

    7 Eggs
    1lb Frozen chopped or cut Broccoli
    1 Large Potato cut in vary small cubes = about 2 cups
    1/2cup Milk, nonfat
    1 cup Cheese Shredded part skim mozzarella
    salt, pepper, onion powder, garlic powder

Tips

If you don't want to make ahead skip the cover and refrigerate step and only bake about 30 mins.


Directions

beat the eggs, add in the milk and seasonings and beat again.
stir in the chopped broccoli and potato.
generously grease or spray a 9x13 baking pan and pour the egg mixture in. Spread evenly.
Cover and refrigerate up to 24 hours.
Heat the oven to 350* and remove cover from pan. Sprinkle with cheese and put in the oven for about 40 minutes until the eggs set.
Divide the casserole in to 12 servings and serve

Serving Size: makes 12 servings
