Ingredients

    6 eggs
    1 cup frozen hashbrowns (thawed)
    1/3 cup green bell pepper diced
    1/3 cup celery diced
    1/3 cup leeks diced
    1/3 cup mushrooms diced
    1 tsp. oil oil
    1/3 cup shreeded cheese (your favorite kind)
    1 tsp. salt (optional)
    1 tsp. pepper (optional)
    1/2 tsp. Mrs. Dash (optional)

Tips

you can sub. veggie broth or water for olive oil to reduce cals. and fat.


Directions

heat olive oil, saute leeks,celery,green peppers,mushrooms for about 5-7 minutes to soften veggies, add tamari. Remove from heat.
Beat 6 eggs, with 1 tlbs. water add 1 cup thawed frozen hashbrowns. add salt and pepper. Add sauted veggies.Stir.
pour into 8X10 baking dish. cook 20 mins. @350.
