2 cans tomatoes with juice
1.5 cup thinly sliced onions
2 cups 2" celery strips
1.5 cups carrot strips
.75 cup green pepper strips
2 cups fresh green beans
.5 cups zucchini sliced
ground fresh pepper to taste
garlic powder to taste
1 T sugar or Splenda
3 T. tapioca
Original recipe called for canned French style green beans, drained, but we prefer fresh. Recipe also called for 2.5 teaspoons of salt and 3 tablespoons of melted butter or margarine, but we've omitted both and not missed them.
Amounts of vegetables can vary. I often add more zucchini because we like it. Also, red and yellow bell peppers taste and look good in it, too.
This was my mother's recipe. It may have been an original; I'm not sure.
