Blueberry-Oatmeal Muffins

Ingredients

    1 1/4 cup all purpose flour
    2/3 cup quick-cooking oats
    1/2 cup sugar
    1 tablespoon baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1 cup nonfat or lowfat buttermilk
    2 tablespoon vegetable oil
    1 tablespoon vanilla extract
    2 large egg whites
    1 cup blueberries (thawed if frozen
    Cooking spray

Directions

Preheat oven to 400. Mix the dry ingredients, flour, oats, baking powder, baking soda and salt in a bowl.
In a separate bowl mix buttermilk, oil, vanilla, and egg whites. Blend together. Make a well in the dry ingredients and add the wet mixture to the dry. Add Blueberries. Mix til blended.
Coat a nonstick 12 muffin tim with cooking spray and spoon equal amounts of batter into each cup. Bake for 18 minutes

Makes 12 muffins. Two muffins equals one serving.
