Number of Servings: 4

Ingredients

    1. 1 cup chopped carrot
    2. 1 cup chopped celery
    3. 1 cup chopped onion
    4. 10 cloves of chopped garlic
    5. 1 tablespoon extra virgin olive oil

    6. 4 cups of water
    7. 1/2 teaspoon thyme
    8. 1 meatless burger
    9. 4 tablespoons parsley

Directions

MIX first 5 ingredients well. Place in oven proof dish. Cook in 500 degree oven for 20 minutes.

Place ingrdients 6-9 in pot. Heat while vegetables roast.

add roasted vegetables into the pot.
Bring to a boil.
Cover and simmer 20 minutes.
