Italian Meat Sauce - Reduced Sodium

Introduction

Number of Servings: 8

Ingredients

    4 Cloves Garlic, chopped
    1 Cup Chopped Onions
    3/4-1 Cup Sliced Mushrooms (fresh)
    1 lb ground turkey (I used perdue 80/20-lower in sodium)
    1/4 tsp kosher salt
    2 Cans No Salt Added Diced Tomatoes with Basil, Oregano and Garlic (undrained)
    1 Can No Salt Added stewed tomatoes (undrained, pureed in blender)
    1 tsp basil leaves
    1 tsp oregano leaves
    1 tsp dried rosemary leaves (crush in palm)
    Italian Seasoning to taste

Tips

Serve with pasta(cooked without salt!!)...adding 1-2 tablespoons of grated parmesean will add some salty flavor when served and only add 100-200 mg of sodium.


Directions

Heat Olive Oil in skillet over medium. Add Garlic and onions, saute until fragrant, Add ground turkey and sprinkle salt and herbs over the whole mess, saute until turkey is no longer pink. Add diced tomatoes and mushrooms and pureed stewed tomatoes. Simmer until desired thickness achieved, about 25-30 minutes.

Serving Size: Makes 8 1 Cup servings (or so)
