My Black Bean Soup

Ingredients

    *Extra Virgin Olive Oil, 2 tbsp
    *Purple Onion, 2 cup
    Garlic, 8 clove
    *Cumin - Ground, McCormick 3 tbsp
    Pepper, red or cayenne, 2 tbsp
    *Red Bell Pepper 1 large diced
    *Pepper, Poblano 3 roasted diced
    *chicken stock large kitchen basic brand, 32 oz
    *Amore Italian Tomato Paste (In a Tube), 2 tbsp
    *cilantro (fresh), 2 cup , chopped
    Red Ripe Tomatoes, 3 diced
    3 packages Goya black beans - dry
    3 limes , juice and zest

Tips

If you have a gas stove you can roast the poblano peppers right on the open flames burner. If not place them on a cookie sheet and brown under the broiler or an outdoor grill until charred.


Directions

Rinse black beans - place in a stock pot and cover with 12 cups boiling water - let sit covered for 1 hour.
In another stock pot heat olive oil over medium heat , add diced red onion, garlic , cumin , cayenne. Saute until soft. Add red bell pepper , roasted poblanos. Drain the black beans and add . Add chicken stock , 4 cups water , tomato paste, diced tomatoes - let simmer 45 minutes. Add chopped cilantro , lime zest and lime juice- simmer 15 minutes. Salt and pepper to taste. Enjoy.
