Queso Blanco

Introduction

Semi-homemade... not completely from scratch, but also not from velveeta queso! Semi-homemade... not completely from scratch, but also not from velveeta queso!
Number of Servings: 12

Ingredients

    2 pkg Cream Cheese (16oz total) - softened
    1 can diced Tomatoes with Green Chiles
    2cups Monterrey Jack (or Mexican blend) cheese
    1-2cups Parmesan Cheese
    1/2 cup Mayonnaise

Tips

I used reduced fat cream cheese.
I also used Mexican blend instead of Monterrey jack.


Directions

Preheat oven to 425 degrees.

Drain can of diced tomatoes and green chiles.
In big bowl, put in all ingredients and mix well.

Spread mixture into casserole dish. Bake 10-30min or until mixture is bubbly.

Serving Size: makes 12 servings at about 1/2cup each
