Whole Wheat Shortbread

Introduction

Adapted from my grandma's Scottish shortbread recipe. Could possibly substitute light butter to reduce calories. To make it just like she did, use white flour. Number of Servings: 35

Ingredients

    1 1/2 C unsalted butter
    1 C brown sugar
    4 C flour

Directions

Cream butter and brown sugar. Add flour a little at a time, mixing well each time. After all flour is added, mix until it sticks together. You may need to add a couple tablespoons of milk or water to make it stick together.

Form dough into a loaf. Divide into fourths. Roll into 1/2 inch thick rectangles. Transfer to greased baking sheet. Don't put them too close together, as they will expand some. Use a fork to perforate into 1x1.5 inch rectangles.

Place in preheated 325-degree oven and bake 40 minutes. Cool on wire rack.

Serving Size: Makes approx. 35 1x1.5" pieces
