Baked Potato Soup

Introduction

This filling comfort food was a recipe given to me by a friend I worked with, Pam J. This filling comfort food was a recipe given to me by a friend I worked with, Pam J.
Number of Servings: 16

Ingredients

    4 Baking Potatos
    6-8 slices of turkey bacon
    1 med onion
    2/3 c. white whole wheat flour
    2 C shredded cheddar cheese
    6 C organic low sodium chicken broth
    1/4 c fresh green onions, thinly sliced
    1/4 tsp basil
    1/2 tsp pepper
    1 1/2 tsp salt (or salt substitute)
    1/4 C parsley, chopped
    1 TBS Tabasco (pepper sauce)
    2 C Half & Half

Directions

-Bake potatoes, peel, & dice. Cook bacon & remove from pan; saute' onions in bacon fat. Add flour & make roux with onions.

-Gradually add chicken broth(heated first). Stir until smooth and thickened. Simmer 10 minutes.

-Add potatoes, whipping cream, & crumbled bacon. Add seasonings. Simmer another 10 minutes.

-Add cheese; once cheese has melted dish is ready to serve.
