2 cups Corn Bread Stuffing mix
1 cup low sodium chicken broth
    1 apple, chopped
    2 stalks celery, chopped

Using lean boneless pork chops (3 oz. per serving) adds approximately 160 calories.

Directions

Mix all ingredients. Spray inside of crock pot with non-stick spray. Put half of stuffing mix into crock pot, cover with meat of your choice, cover with remaining stuffing mix. Cook on low 6 - 8 hours until meat is tender.

  • This dish was very good, cornbread had a real nice taste, apple and cranberry add just the right tartness and the pork chop stayed really moist. Since this was a crock pot dinner and also a running day, it worked out real good; will do again. - 12/23/13
