Bob Harper's Apple Chicken Salad

Introduction

Straight from the Jumpstart to Skinny book. I"m including the full recipe for those that want to alter it. Remember that Bob doesn't count vegetables from the list towards calories. If you want the values from the book, someone has already entered the items, or just copy the calories from the book:

Ingredients

    4 ounces roasted chicken breast, cubed
    1 small apple, cut into cubes
    1 cup sliced celery
    1 small zucchini, cut into cubes
    2 tablespoons nonfat Greek yogurt
    1 teaspoon finely chopped fresh dill
    1 teaspoon fresh lemon juice
    3 cups chopped mixed greens

Directions

1. In a small bowl, mix the chicken, apple, celery, zucchini, yogurt, dill, and
lemon juice.
2. Place on the mixed greens and watch your coworkers drool with envy.

Serving Size: Makes one serving
