Number of Servings: 8


    3 tbsp olive oil
    3 tbsp flour
    2.5 cups veggie broth
    2 cups cheddar cheese

    16oz whole wheat pasta
    1 bag baby spinach
    1 shallot


In a small sauce pan: Put in oil and flour, mix til pasty. Add the veggie broth. Simmer til it thickens. Add cheese. Cook til it melts.

In another pan make the pasta according to package directions.

In a small skillet combine shallots and spinach. Cook til the spinach is wilted. May need to use a bit more olive oil.

Preheat oven to 350. Combine the pasta, sauce, and spinach in a baking dish. Put in the oven for 20-30 minutes.
