Evelyn's Spanish Rice

Introduction

My favorite dish brought to the Thanksgiving Potluck this year at work!!! My favorite dish brought to the Thanksgiving Potluck this year at work!!!
Number of Servings: 10

Ingredients

    Ham 6 oz.
    1 small onion diced
    1/2 red pepper diced
    1/2 green pepper diced
    1/2 yellow pepper diced
    2 cups Carolina Jasmine rice
    3 TBSP olive oil
    2 cans Chicken Broth
    5 cloves of garlic crushed
    1 can Goya Green Pigeon Peas
    Cilantro, 1 handful chopped
    2 packets of Sazon seasoning

Directions

saute veggies in olive oil with ham. Add pigeon peas & stir in 1 can of chicken broth & add 2 packets of Sazon. Simmer x 5 min on low to med. heat. Add 3-5 cloves of minced garlic & chopped cilantro. Then add rice & stir together adding the second can of chicken stock. Make sure the liquid covers the rice. Cover & cook x 20 minutes on low to med. heat. Uncover & give a few stirs, then recover & turn to low for another 15-20 minutes.
