1/3 cup shortening
1/3 cup brown sugar
1 egg, beaten
1 3/4 2% milk
1 cup cornmeal
1 cup whole wheat flour
4 tsp. baking powder
1/4 tsp. salt
Beat shortening and sugar together. Add egg and beat until fluffy. Add milk.
Add dry ingredients.
Mix until just blended and portion into muffin cups.
Bake for 25 minutes in a 425 oven
