Shoe Peg Corn Dip

Number of Servings: 30

Ingredients

    Add corn, onion, cheese, pepper, sour cream, mayo, and salt and pepper to taste. I serve them with pita chips for myself, but I use corn chips for guests.

Directions

Mix all ingreditents together and refrigerate. I like to make it at least 1-2 days ahead of time, it tastes better when it has had a chance to set.

You can use any yellow corn, but you are supposed to use shoe peg corn, it is a little sweeter.

Also, you can use more or less jalapeno, to taste. I like to leave the seeds in, I like it spicy. You can take them out if you don't like so much heat.
